VIN SANTO D.O.C.
It is extremely rare because it is produced in small quantities
It represents the typical and traditional dessert
wine in Tuscany. The D.O.C. Vin Santo Colline Lucchesi official recognition has increased its already undoubted
value. Today the Vin Santo of Fubbiano has reached a very high level in Italy among the best wines
which are made out of dried grapes (it has obtained the 1st Prize in the National Competition of Gradara
2007). The grapes which come from autochthonous vines planted in the 1970ies, are carefully selected and
dried in a natural way, and are placed in a cellar which allows a good aeration.
Fermentation and maturation take place in small oak barrels which are sealed and are kept in cellars which
allow the seasonal temperature variations.
It has an intense golden colour, tending to amber. Its nose has reminiscences of honey and toasted almond.
The taste is agreeable with a good acidity, which enhances a rich, clean delicate flavour, with distinctive
notes of candy bark, citrus and dried figs.
Serving Temperature : 14–16 °C
Pairings : with dry biscuits, with dessert at the end of a meal, with nuts and dried fruits: Extremely
appreciated also with black chocolate (min.70 % cocoa) or with a medium-bodied cigar.
